Herbed Potato Salad

Light and fresh potato salad with herbs instead of heavy mayonnaise.

Ingredients

2 lbs small red potatoes, quartered 1/2 cup fat-free plain yogurt 2 tablespoons Dijon mustard 2 tablespoons lemon juice 2 tablespoons fresh dill, chopped 2 tablespoons fresh parsley, chopped 2 tablespoons fresh chives, chopped 1/2 cup celery, diced 1/4 teaspoon salt 1/4 teaspoon pepper

Instructions

1. Boil potatoes until just tender, about 15 minutes. 2. Drain and let cool slightly. 3. Whisk together yogurt, mustard, lemon juice, and herbs. 4. Combine warm potatoes with celery in large bowl. 5. Pour dressing over potatoes and toss gently. 6. Season with salt and pepper. 7. Serve warm or chilled.
