Moist cornbread with creamed corn. Husband-approved and freezes well!
Ingredients
1 cup cornmeal
1/2 cup whole wheat flour
1 tablespoon baking powder
1-3 tablespoons sugar (to taste)
1/2 teaspoon salt
1/3 cup applesauce (or 1 apple made into sauce)
3/4 cup skim milk
2 egg whites
1 (15 oz) can creamed corn (optional)
Instructions
1. Preheat oven to 425°F.
2. Spray an 8x8 inch pan or cast iron skillet and put in oven to preheat.
3. Mix all ingredients together.
4. Pour batter into heated pan.
5. Bake for 20 minutes (add 10 minutes if using creamed corn).
Note: Freezes well. Refrigerate leftovers and reheat at 350°F for 15 minutes for a crispy exterior.
