Apple and Oat Bran Muffins

Moist muffins with shredded apple. Batter keeps in fridge for up to 5 days!
Ingredients
1 1/4 cups whole wheat flour
1 cup oat bran
1/3 cup packed brown sugar
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup low/nonfat buttermilk
2 egg whites
2 tablespoons applesauce or prune puree
3/4 cup shredded, peeled apple
Instructions
1. Mix dry ingredients together. Set aside.
2. Mix buttermilk, egg whites, and applesauce in small bowl.
3. Add wet to dry ingredients. Mix until just moistened.
4. Fold in shredded apple.
5. Spray muffin cups with non-stick spray.
6. Spoon about 1/4 cup batter into each cup.
7. Bake at 375°F for 18-20 minutes until toothpick comes out clean.
Note: Batter can be stored covered in fridge for up to 5 days!
