Versatile muffin recipe - just pick your favorite fruit combination!
Ingredients
Wet ingredients:
2 egg equivalents
3/4-1 cup brown sugar
1 teaspoon vanilla
1/2 cup applesauce
Dry ingredients:
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
Fruit combinations (pick one):
- 1 cup mashed banana + 1/2 cup low-sugar marmalade
- 1 cup mashed banana + 1/2 cup strawberry preserves
- 1 1/2 cups fresh blueberries
- 1 1/2 cups chopped Granny Smith apples
- 1 cup mashed banana + 1/2 cup mashed mandarin oranges
Instructions
1. Preheat oven to 350°F.
2. Mix dry ingredients thoroughly. Set aside.
3. Mix wet ingredients in a large bowl.
4. Add dry ingredients to wet. Mix until just blended.
5. Add your chosen fruit combination.
6. Spoon into muffin cups.
7. Bake for 30 minutes or until toothpick comes out clean.
