Apple Barley

Sweet barley with dried apples and sesame seeds. The sesame prevents it from being too dessert-like!

Ingredients

1/2 cup barley grain 1/2 tablespoon sesame seeds (essential) 1 pinch coriander seeds 4 dried apple rings, cut into small pieces 1 sprinkle shoyu (optional) 1 3/4 cups water

Instructions

1. Wash barley thoroughly to remove powdery residue. 2. Roast barley in dry pan until evenly browned (prevents rubbery texture). 3. Pressure cook barley with apple pieces, coriander, and water for 45 minutes. 4. While cooking, dry roast sesame seeds until fragrant (less than 5 minutes). 5. Combine cooked barley with sesame seeds. 6. Add a tiny amount of shoyu to taste if desired.
