Apple Carrot Oat Bran Muffins

Very moist and sweet muffins that freeze beautifully. A real winner with everyone!
Ingredients
1 1/2 cups oat bran (not wheat bran)
3/4 cup plain flour
1/3 cup skim milk powder
1/4 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons salt
1 tablespoon baking powder
1 cup grated carrot (about 1 medium-large carrot)
1 Granny Smith apple, peeled and coarsely chopped
1/3 cup raisins
Zest of 2 oranges or lemons (optional)
3 teaspoons egg replacer + 6 tablespoons water
1/2 cup lite soy milk + 1/2 cup skim yogurt (buttermilk substitute)
1/4 cup applesauce
1 teaspoon vanilla
Instructions
1. Arrange rack just below center of oven. Preheat to 400°F.
2. Combine oat bran, flour, milk powder, brown sugar, cinnamon, salt, and baking powder.
3. Add carrot, apple, raisins, and zest.
4. In second bowl, combine egg replacer with water, milk, applesauce, and vanilla.
5. Pour wet mixture into dry. Stir only enough to just combine - batter will be very wet.
6. Spray muffin tins with cooking spray.
7. Fill cups about halfway.
8. Bake 20-25 minutes.
Note: Recipe doubles well and freezes beautifully!
