Simple oat bran muffins with fresh apple. Add banana or applesauce for extra moisture!
Ingredients
2 1/2 cups oat bran
1 1/4 teaspoons cinnamon (or more)
1 tablespoon baking powder
1/2 cup evaporated skim milk (or soy or rice milk)
3/4 cup apple juice concentrate
2 egg whites
1 medium apple, cored and chopped (not peeled)
2 mashed bananas or 1/2 cup applesauce (optional, for moisture)
Instructions
1. Preheat oven to 425°F.
2. Mix dry ingredients (oat bran, cinnamon, baking powder).
3. Mix wet ingredients (milk, juice, egg whites).
4. Blend wet and dry together.
5. Stir in chopped apples (and banana/applesauce if using).
6. Spoon into sprayed muffin cups.
7. Bake as directed until golden.
Note: Try with peaches, pears, or berries instead of apples!
