Dr. Weil's famous apple muffins with no added fat. Best eaten warm!
Ingredients
2 cups whole wheat pastry flour
1 cup unbleached all-purpose flour
1 1/4 cups oat bran
2 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 (12 oz) can frozen Granny Smith apple juice concentrate, thawed
2 large Gala apples, cored and chopped
Raw sugar mixed with cinnamon for topping (optional)
Instructions
1. Preheat oven to 325°F (or 350°F for slightly faster baking).
2. Lightly oil 12-hole muffin tin or spray with cooking spray.
3. Sift flours, oat bran, baking soda, cinnamon, and nutmeg together in large bowl.
4. Add apple juice concentrate, chopped apples, and 1 cup water.
5. Mix by hand just enough to moisten - do not overbeat.
6. Spoon batter into prepared muffin cups.
7. Sprinkle with cinnamon sugar if desired.
8. Bake until tops are lightly browned, about 25 minutes.
9. Remove from tin while hot. Cool on rack 10 minutes. Serve warm.
