Simple two-ingredient fruit butter. Must use very ripe, soft apricots!
Ingredients
2 lbs very ripe apricots, pitted and quartered
1 1/3 cups sugar
Instructions
1. Run apricots through a food mill.
2. Combine apricots and sugar in bowl. Let sit 2-3 hours.
3. Heat puree in non-reactive saucepan (not aluminum) over medium-low heat until thick.
4. Stir often to prevent sticking.
5. Pour into sterilized jars.
6. Store in freezer or refrigerator.
Makes about 3 cups.
Note: Unripe apricots will not soften up - you must use very ripe, soft fruit!
