Traditional Puerto Rican rice and beans made fat-free with brown rice, turmeric, and saffron for authentic flavor.
Ingredients
For Rice:
1 cup brown rice
2 1/2 cups water
3/4 cup peas
1 small jar pimientos
1 bay leaf
1/2 teaspoon turmeric
1/2 teaspoon saffron threads
1 teaspoon adobo seasoning or salt to taste
For Beans:
1 can red kidney beans
2 medium onions, halved
4 cloves garlic, whole
1 medium potato, diced
1 teaspoon adobo seasoning
1 bay leaf
Instructions
1. Boil water and add rice, turmeric, saffron, and seasoning.
2. Cook for 1 hour. During last 5 minutes, add pimientos and peas.
3. While rice cooks, place onions, garlic, and potato in a pan.
4. Cover with beans and cook covered for 30 minutes.
5. Remove onion, garlic, 1/4 of potatoes and beans to blender.
6. Blend well and add back to pan (makes beans thick and hearty).
7. Add bay leaf and seasoning, stir and cook until rice is done.
8. Let both stand 5 minutes off heat.
9. Serve rice on plate topped with beans.
Note: The saffron is optional but adds authentic flavor. Turmeric alone gives the beautiful yellow color.
