Asparagus with Black Bean Sauce

Crisp asparagus and mushrooms in a savory fermented black bean sauce. Restaurant-quality!
Ingredients
1 lb asparagus, stiff ends peeled
1/4 lb brown button mushrooms
2 garlic cloves, minced
1 tablespoon fermented black soybeans
1.5 tablespoons rice vinegar
1 tablespoon tamari or soy sauce
1 teaspoon potato starch or cornstarch
1 teaspoon brown sugar
1 tablespoon sake or rice wine
Instructions
1. Cut asparagus on the diagonal into 1-2 inch pieces. Blanch for 5 minutes in boiling water. Drain and set aside.
2. Wash and slice mushrooms. Set aside.
3. Rinse black beans well. Mix garlic and beans together. Set aside.
4. Mix together rice vinegar, tamari, starch, sugar, and sake. Set aside.
5. Have a glass of water ready by the stove.
6. Heat skillet over high heat. Add garlic-bean mixture. Stir fry for 1 minute, adding water as needed to prevent sticking.
7. Add asparagus and stir fry for 10 minutes, adding water as needed.
8. Add mushrooms and stir fry 2-5 more minutes.
9. Add vinegar mixture, stir until sauce thickens. Serve immediately.
