Asparagus and New Potatoes

Simple spring side dish with tender new potatoes and fresh asparagus.

Ingredients

1 lb fresh asparagus, cut into 2" pieces 12 small new potatoes (about 3/4 lb) 1 tablespoon butter buds 2 tablespoons lemon juice 1/4 teaspoon each salt and pepper 2 tablespoons fresh dill or 1/2 teaspoon dried

Instructions

1. Steam asparagus until crisp-tender, about 4-5 minutes. 2. Boil potatoes until tender, about 15-20 minutes. 3. Drain potatoes and quarter them. 4. Combine asparagus and potatoes in serving dish. 5. Mix butter buds, lemon juice, salt, pepper, and dill. 6. Pour over vegetables and toss gently. 7. Serve warm.
