Quick weeknight dinner with chayote squash, yam, and chickpeas. On the table in 30 minutes!
Ingredients
1 large onion, chopped
3 stalks celery, cut in 1/2 inch pieces
Garlic to taste
1 chayote squash, peeled and cubed
1 yam, peeled and cubed
2-3 carrots, peeled and cubed
1 (8 oz) can flavored tomatoes
1 (8 oz) can garbanzo beans, drained
1 teaspoon chili powder
1 tablespoon fresh oregano
1 tablespoon fresh thyme
1 tablespoon fresh basil
Fresh cilantro for garnish
1 cup dry couscous
Instructions
1. Dry sauté onions, garlic, and celery, adding water as they start to stick.
2. Add fresh vegetables, cover for 5 minutes, adding water if too dry.
3. Add tomatoes and garbanzos, heat through.
4. Prepare couscous according to package directions.
5. Serve vegetables over couscous. Garnish with cilantro.
Tip: Try Trader Joe's Santa Fe style couscous with this - it has corn, black beans, and spicy seasonings!
