A simple macrobiotic dish of azuki beans with winter squash. Serve over brown rice.
Ingredients
1 cup dry azuki beans
1 strip kombu (6-8 inches long)
1 cup buttercup, acorn, or other winter squash, cubed (unpeeled)
1/2 teaspoon sea salt
Water as needed
Instructions
1. Wash beans and soak in water for 6-8 hours.
2. Place kombu on bottom of pot, cover with squash cubes.
3. Add soaked, drained beans on top.
4. Add water to just cover the squash layer (not the beans).
5. Bring to boil slowly over low heat.
6. Cover after 10-15 minutes.
7. Cook until beans are 70-80% done, about 1 hour.
8. Add cold water as needed to keep level constant.
9. When beans are nearly done, add sea salt.
10. Cook another 15-30 minutes until tender.
11. Serve with brown rice.
