Traditional Japanese red bean rice. Nutritious, comforting, and protein-rich!
Ingredients
1/3 cup azuki beans
2 cups uncooked brown rice
3 1/4 cups water
2 pinches sea salt
Toasted sesame seeds for garnish
Minced parsley for garnish
Instructions
1. Wash beans and combine with 1 1/2 cups water in saucepan. Bring to boil.
2. Simmer uncovered for 10-15 minutes, then cool to lukewarm.
3. Wash rice and place in pressure cooker.
4. Drain beans and add water to bean liquid to equal 3 1/4 cups.
5. Add beans and liquid to rice along with salt.
6. Bring to pressure, reduce heat, and cook for 50 minutes to 1 hour.
7. Lower pressure. Remove cover, toss, and garnish with parsley and/or sesame seeds.
Variation: Substitute 1/2 cup barley or sweet brown rice for 1/2 cup of the rice.
