A Caribbean-inspired one-pot meal with white beans, rice, and habanero heat. Freezes well!
Ingredients
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 habanero chile, diced small
3 cups vegetable bouillon
1 (12 oz) can chopped tomatoes
3 zucchini, chopped
1 cup brown rice
2 cans small white beans, undrained
1 cup frozen corn
1/4 cup fresh cilantro, chopped
Instructions
1. Bring onion, garlic, peppers, habanero, and 1/2 cup bouillon to boil in large pot.
2. Simmer 10 minutes until vegetables soften.
3. Add remaining bouillon, tomatoes, and rice.
4. Return to boil and simmer covered 15 minutes.
5. Add zucchini and simmer 30 more minutes until rice is tender.
6. Stir in beans, corn, and cilantro.
7. Heat through about 5 minutes.
8. Serve hot. Freezes well!
