Baked Bean Loaf

A simple vegetarian loaf using canned baked beans. Great for easy weeknight dinners!

Ingredients

1 can baked beans 1 1/4 cups breadcrumbs 1 1/2 cups fat-free cheese, grated (optional, can reduce or omit) 1 onion, chopped 2 teaspoons Italian herb blend 2 egg whites Skim milk to thin if needed

Instructions

1. Preheat oven to 325°F. 2. Mash beans and breadcrumbs together. 3. Add remaining ingredients to form a stiff dough. 4. Thin with skim milk if mixture is too thick. 5. Place in loaf pan. 6. Bake 1 hour until set and golden. 7. Let rest 5 minutes before slicing.
