Baked Bean Meatloaf

Easy meatless loaf made with baked beans. A true rib-sticker that's simple to make!

Ingredients

1 (16 oz) can baked beans 1 1/4 cups breadcrumbs 1 onion, chopped 2 teaspoons dried mixed herbs 2 egg whites OR egg substitute equivalent to 1 egg 1 cup fat-free grated cheese (optional)

Instructions

1. Preheat oven to 325°F. 2. Mash beans and breadcrumbs together. 3. Add remaining ingredients to form a 'dough'. Thin with skim or soy milk if needed. 4. Put in Pam-sprayed loaf pan. 5. Bake 1 hour. Note: Serve with cooked carrots or light vegetables. It's dense and filling - skip the potato side dish!
