Simple Baked Brown Rice

Foolproof oven-baked brown rice with vegetables. Set it and forget it while you prepare the rest of dinner.

Ingredients

2 cups brown rice 2 cups vegetable broth 1 cup water 1/2 cup diced onion 1/2 cup julienned bell pepper 1 cup dried tomatoes (optional)

Instructions

1. Preheat oven to 350°F. 2. Combine all ingredients in a casserole dish. 3. Cover and bake for 1 hour or until rice is done. 4. Serve as a side dish or base for other dishes. Serving suggestion: Pair with grilled zucchini and mushrooms braised in red wine and balsamic vinegar.
