Japanese-inspired rice dish with bamboo shoots, ginger, and umami-rich seaweed stock.
Ingredients
1 cup raw short grain rice
About 2 cups stock (seaweed dashi or shiitake mushroom stock recommended)
2 onions
1 can bamboo shoots
1 teaspoon sherry
1 teaspoon chile sauce
1 teaspoon crystallized stem ginger, finely chopped
Instructions
1. Put rice in nonstick pan with enough stock to cover.
2. Simmer until rice is cooked, adding more liquid if needed.
3. Brown the onions in a separate pan.
4. Add sherry, chile sauce, and ginger to onions.
5. Cook 3-4 minutes until fragrant.
6. Serve onion mixture over the cooked rice.
Note: Japanese seaweed dashi or shiitake mushroom stock gives this dish incredible flavor.
