Moist vegan banana bread studded with blueberries. Uses sugar substitute for fewer calories!
Ingredients
4 ripe bananas
1/4 cup brown sugar
1/4 cup sugar substitute (Equal)
1 teaspoon cinnamon
1/4 cup raisins (optional)
1 teaspoon vanilla
2 cups self-raising whole wheat flour
1 can (425g) blueberries, drained
Instructions
1. Mash bananas with sugars and vanilla.
2. Add remaining ingredients, folding in blueberries last.
3. Pour into sprayed loaf tin.
4. Bake at 320°F (160°C) for at least one hour.
5. (Or use muffin tins for less baking time.)
6. Remove from pan and let cool before cutting.
