Moist banana bread with steel-cut and rolled oats. Great with dried fruit additions!
Ingredients
1/4 cup steel cut oats, soaked in 1/4 cup boiling water until room temperature
1 teaspoon salt
3 tablespoons powdered buttermilk
3/4 cup rolled oats
1 1/2 cups whole wheat flour
2 tablespoons vital wheat gluten
2 tablespoons brown sugar
3 tablespoons water
Egg replacer equivalent to 1 egg
3/4 cup mashed very ripe bananas
2 teaspoons yeast
Instructions
1. Place all ingredients except yeast in bread machine.
2. Place yeast in dispenser.
3. Program for whole wheat and press Start.
Variations: Add 1/2 cup dried fruit (apricots, cherries, raisins) at the beep or around 2:40 left in whole wheat cycle.
