Tofu slathered in smoky homemade barbecue sauce and baked until caramelized. Great on sandwiches or with coleslaw.
Ingredients
2 blocks (14 oz each) extra-firm tofu, pressed and sliced
1 cup tomato sauce or ketchup
2 tablespoons maple syrup
1 tablespoon apple cider vinegar
1 tablespoon soy sauce
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon liquid smoke
Pinch of cayenne pepper
Instructions
1. Press tofu at least 1 hour. Slice into 1/2-inch thick slabs.
2. Mix all sauce ingredients in a bowl.
3. Place tofu in shallow dish and pour half the sauce over. Marinate 30 minutes.
4. Preheat oven to 375°F. Line baking sheet with parchment.
5. Arrange tofu on sheet, spoon some marinade on top.
6. Bake 20 minutes, flip, add more sauce, bake 20 more minutes.
7. Brush with remaining sauce and bake final 5-10 minutes until caramelized.
8. Serve on buns or over grains.
