Simple savory barley with mushrooms and herbs. Comfort food at its best!
Ingredients
1 cup pearl barley
3 cups water or chicken-flavor veggie broth
1/2 pound small whole mushrooms (or large, chopped)
1 onion, chopped
1/2 teaspoon sage
1/2 teaspoon thyme
Instructions
1. Combine barley, mushrooms, onion, sage, thyme, and broth in pot.
2. Bring to a boil.
3. Reduce heat and simmer about 45 minutes until barley is tender and liquid is absorbed.
4. Fluff with fork and serve.
