Barley with Vegetables and Pickapeppa

Colorful barley with zucchini and red pepper, finished with tangy Pickapeppa sauce.

Ingredients

1.5 cups uncooked barley Water to cook barley 1 onion, coarsely chopped 2 cloves garlic, minced 1 small zucchini, quartered lengthwise and sliced 1 small red pepper, coarsely chopped 8 oz mushrooms (canned or fresh) 2 tablespoons Pickapeppa sauce (or more to taste)

Instructions

1. Cook barley according to package directions (boil in 3x water for 45 minutes). Drain. 2. Sauté vegetables in water for about 10 minutes until just tender. 3. Add Pickapeppa sauce and stir well. 4. Stir in cooked barley and mix well. 5. Add more sauce if desired. Serve hot.
