Vegan cornbread with multiple grain flours. Wholesome and satisfying!
Ingredients
2 cups cornmeal
1/2 cup whole wheat flour
1/3 cup oat flour
1/3 cup millet flour
4 teaspoons baking powder
2 cups rice milk
4 tablespoons frozen apple juice concentrate, thawed
3 teaspoons Ener-G Egg Replacer beaten with 4 tablespoons water
Instructions
1. Preheat oven to 375°F.
2. Mix cornmeal, flours, and baking powder together. Set aside.
3. Mix remaining wet ingredients together.
4. Pour wet over dry ingredients. Fold together briefly.
5. Pour into a nonstick 8-inch square pan.
6. Bake for 30 minutes or until toothpick comes out clean.
