Basic Vegan Crepes

Thin, delicate crepes without eggs. Perfect for sweet or savory fillings!

Ingredients

Egg substitute equivalent to 4 eggs 1 1/4 cups water 1 cup rice milk 1/2 teaspoon salt 2 cups whole wheat pastry flour or unbleached white flour

Instructions

1. Put all ingredients in a blender or food processor. 2. Blend at high speed until smooth. 3. Let batter rest 30 minutes. 4. Heat nonstick pan over medium heat. 5. Pour about 3 tablespoons batter into pan, swirling to coat. 6. Cook until edges lift, about 1 minute. 7. Flip and cook other side 30 seconds. 8. Stack on plate and fill as desired.
