A fragrant Thai-inspired stir-fry with tofu, fresh basil, and colorful vegetables.
Ingredients
1 block (14 oz) extra-firm tofu, pressed and cubed
2 cups broccoli florets
1 red bell pepper, sliced
1/2 onion, sliced
3 cloves garlic, minced
1 cup fresh basil leaves
3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon maple syrup
1/2 teaspoon red pepper flakes
1/4 cup vegetable broth for sautéing
Instructions
1. Press tofu and cut into 1-inch cubes.
2. Heat broth in large skillet or wok over medium-high heat.
3. Add tofu and cook until golden on all sides, about 8 minutes. Remove.
4. Add more broth if needed. Sauté onion and garlic 2 minutes.
5. Add broccoli and bell pepper. Cook 4-5 minutes until crisp-tender.
6. Mix soy sauce, vinegar, maple syrup, and red pepper flakes.
7. Return tofu to pan, add sauce, toss to coat.
8. Remove from heat, stir in fresh basil.
9. Serve over rice or noodles.
