Bean and Cheese Quesadillas

Quick and filling quesadillas with beans, jalapeños, and melted fat-free cheese.
Ingredients
Per quesadilla:
1/8 cup shredded fat-free mozzarella
1/4 cup rinsed canned beans (Romano or pinto)
5 thin jalapeño rings (fresh or pickled)
1 tablespoon chopped fresh cilantro
1 tablespoon grainy French mustard
Chili powder or cumin (optional)
2 corn tortillas
Instructions
1. Spread mustard on tortilla.
2. Top with beans, cheese, jalapeño, and cilantro.
3. Cover with second tortilla.
4. Cook in nonstick pan or bake at 400°F.
5. Turn once until both sides are golden and cheese is melted.
6. Serve with chopped tomato, onion, cucumber, lettuce, and salsa.
These are very filling! Also works great as a pizza topping with grated carrots.
