Bean and Rice Burritos

Classic McDougall-style burritos with pinto beans and brown rice.

Ingredients

28 oz canned pinto beans, drained and rinsed 1-2 cups cooked brown rice Dash chili powder Dash garlic powder Dash cumin 3/4 cup water 6 tortillas Toppings: Chopped lettuce Chopped scallions Chopped ripe tomato 2 cups salsa

Instructions

1. Combine beans, rice, spices, and water in saucepan. 2. Heat and mash slightly with potato masher. 3. Warm tortillas. 4. Fill with bean mixture. 5. Top with lettuce, scallions, tomato, and salsa. 6. Roll up and enjoy!
