Colorful vegetable fajitas with zucchini, peppers, and seasoned pinto beans.
Ingredients
4 (8-inch) flour tortillas
1 1/2 cups sliced zucchini
1 green bell pepper, cut into strips
1 medium onion, sliced
1 (15 oz) can pinto beans, drained and rinsed
1 large tomato, chopped
3/4 teaspoon chili powder
1/2 teaspoon cumin
1/8 teaspoon garlic salt
1/8 teaspoon oregano
Nonfat sour cream (optional)
Salsa (optional)
Instructions
1. Heat tortillas as directed on package.
2. Spray large nonstick skillet with cooking spray.
3. Cook zucchini, bell pepper, and onion over medium heat 5-7 minutes until crisp-tender.
4. Add beans, tomato, and spices.
5. Mix well and cook until heated through.
6. Spoon 1/4 of mixture down center of each tortilla.
7. Fold in edges.
8. Serve with sour cream and salsa if desired.
