Beans and Salsa Stuffed Potatoes

Quick Tex-Mex style stuffed potatoes with black beans and fresh salsa.

Ingredients

4 large baking potatoes 1 can (15 oz) black beans, drained and rinsed 1 cup fresh salsa 1/4 cup fat-free sour cream 2 green onions, sliced Fresh cilantro for garnish Hot sauce (optional)

Instructions

1. Bake potatoes at 400°F for 45-60 minutes or microwave until tender. 2. Warm black beans in small saucepan or microwave. 3. Split potatoes open and fluff with fork. 4. Top each potato with warm black beans. 5. Spoon salsa over beans. 6. Add dollop of fat-free sour cream. 7. Garnish with green onions, cilantro, and hot sauce if desired.
