Delicious TVP meatloaf with nutritional yeast for depth of flavor. Bake in regular oven!
Ingredients
1 cup Beef-Not
1 cup hot water
1 teaspoon Beef-Not powdered gravy mix
1/2 cup tomato ketchup
2 tablespoons Lipton onion soup mix
3 slices stale bread, torn into pieces
1/4 cup chopped onion
2 teaspoons nutritional yeast (non-bitter kind)
1-2 teaspoons prepared mustard
2 egg whites or egg replacer
1 tablespoon fat-free mayonnaise
1/4 cup bran or oatmeal flakes
Instructions
1. Reconstitute Beef-Not: mix with hot water and gravy mix. Microwave covered 2 minutes. Keep covered 30 minutes.
2. Combine remaining ingredients with reconstituted Beef-Not.
3. Adjust consistency with more oatmeal or egg replacer as needed. Should be gooey and smell good!
4. Pack into loaf pan.
5. Bake in regular oven at 350°F until done.
6. Optional: Top with mashed potatoes and paprika after baking.
7. Serve with vegetarian gravy and baked beans.
Note: Do NOT skip the nutritional yeast - it's essential! Not a low-sodium recipe (500+ mg per portion).
