Hijiki Salad

Marinated hijiki seaweed - rich in minerals. Add to rice and vegetables for a nutritious meal!

Ingredients

1/2 cup crumbled dried hijiki or arame 2 cups water 2 tablespoons tamari or soy sauce 1/4 cup rice vinegar (or cider or wine vinegar) Steamed vegetables for serving Brown rice for serving

Instructions

1. Soak hijiki in water for 20 minutes. 2. Lift out with slotted spoon and place in skillet. 3. Add 1 cup of the settled soaking water, tamari, and vinegar. 4. Simmer covered for 15 minutes. 5. Drain and cool. 6. Add marinated hijiki to steamed vegetables and brown rice.
