Perfect fat-free banana bread for bread machine cake cycle or regular oven. Uses frozen bananas!
Ingredients
1/2 cup sugar
2 cups mashed very ripe bananas (about 6 medium)
1 teaspoon vanilla
2 cups flour (part whole wheat pastry) OR 1 1/2 cups flour plus 1/2 cup bran cereal or oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Shake of cinnamon
Instructions
Mix wet ingredients together. Blend dry ingredients separately. Combine and bake in spray-coated loaf pan at 350°F for 1 hour. Two small loaf pans bake for about 40 minutes.
Bread Machine: Place all ingredients in pan (wet first), select CAKE cycle. Check to ensure all ingredients are moistened. Test for doneness after about an hour with a piece of spaghetti.
