Better Beef and Macaroni

Homemade Hamburger Helper alternative with TVP. Ready in 15 minutes in the microwave!

Ingredients

1 onion, sliced into thin rings 1 cup TVP granules 1 cup boiling water 2 tablespoons steak sauce 2 cups uncooked elbow macaroni 1/4 cup unbleached flour 2 cups water 1 cup water or low-fat soy milk Herbs to taste Fat-free soy Parmesan (optional)

Instructions

1. Rehydrate TVP: combine granules with 1 cup boiling water and steak sauce. 2. Place onion and TVP in 2 1/2-quart microwave casserole with lid. 3. Cover and cook on high until onion is soft, about 5 minutes. 4. Add macaroni, flour, 2 cups water, and soy milk. Stir to blend. 5. Cover and cook on high until pasta is tender, about 10 minutes. 6. Remove and check doneness. Add more liquid if sauce is too thick. 7. Season with herbs or soy Parmesan if desired. Note: Much healthier and cheaper than Hamburger Helper!
