A complete one-pot meal with black beans, rice, zucchini, and habanero heat.
Ingredients
1 tablespoon vegetable bouillon paste
3 cups water
3 cloves garlic, minced
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 habanero pepper, minced
4 tomatoes (from can), chopped
1 cup brown rice, uncooked
3 zucchini, chopped
2 cans black beans, drained and rinsed
1 cup frozen corn
1/2 cup fresh cilantro, chopped
Instructions
1. Heat 3 cups water and mix in bouillon. Set aside.
2. Sauté garlic, onion, and peppers in 1/2 cup broth for 10 minutes.
3. Add remaining broth, tomatoes, and rice.
4. Simmer covered 15 minutes.
5. Add zucchini and simmer 30 more minutes.
6. Stir occasionally to prevent sticking.
7. Add black beans, corn, and cilantro.
8. Cook 5 minutes to heat through.
Freezes well!
