Black Rice with Beans

A flavorful Cuban-style dish combining black beans with rice, cilantro, and warm spices.
Ingredients
1 cup dried black beans
3-4 1/2 cups vegetable broth or water
1 small onion, finely chopped
4 cloves garlic, minced
1/2 cup short-grain white rice
1/4 cup white wine
1 tomato, coarsely chopped
1/2 teaspoon ground cumin
Pinch cayenne pepper
Salt and pepper to taste
1/2 cup fresh cilantro, finely chopped
Instructions
1. Soak beans overnight in 1 quart cold water. Drain and rinse.
2. Place beans and 3 cups broth in stockpot. Bring to boil.
3. Reduce heat and simmer 2-2.5 hours until tender. Reserve broth and beans.
4. Heat 2 tablespoons bean broth in stockpot.
5. Sauté onion and garlic until softened, about 5 minutes.
6. Add rice and stir constantly for 1 minute.
7. Add wine and cook 2 minutes. Add tomato and cook 2 minutes.
8. Keep 1.5 cups bean broth warm. Add to rice 1/2 cup at a time, stirring until absorbed.
9. This takes 20-25 minutes.
10. Add beans and remaining broth.
11. Season with cumin, cayenne, salt and pepper.
12. Remove from heat, stir in cilantro, serve immediately.
