Delicious Asian-style braised eggplant with five-spice flavor. Good hot or cold!
Ingredients
1 large eggplant or 5 small eggplants
3 inches fresh ginger, sliced into fine strips
2 large cloves garlic, crushed
2 tablespoons soy sauce (try low-salt)
2 tablespoons mirin (or sweet sherry)
1 teaspoon sugar
1 cup water or vegetable stock
1/2 teaspoon Chinese five-spice powder
Instructions
1. Slice eggplant into bite-sized pieces.
2. In a nonstick pan, sauté ginger and garlic in 1 tablespoon liquid. Keep pan fairly dry.
3. Brown eggplant gently (5-10 minutes).
4. Add seasoning mixture and water as needed.
5. Simmer until eggplant is cooked through.
6. Serve on rice, toast, wrapped in tortillas, or in rice paper wrappers.
Note: Keeps well in fridge for several days. Great mixed into veggie burgers or salads!
