Quick and easy one-pot bulgur with cabbage and carrots. Ready in 15 minutes!
Ingredients
Small amount of water or broth for sautéing
3/4 cup bulgur
1 large onion, chopped
2 cups chopped green cabbage
2 cups sliced carrots
1.5 cups broth of choice
1 tablespoon soy sauce or tamari (or more)
Parsley for garnish (optional)
Instructions
1. In large saucepan, add bulgur, onion, cabbage, and carrots to small amount of broth.
2. Cook stirring until vegetables begin to soften, about 1 minute.
3. Add 1.5 cups broth and soy sauce. Bring to a boil.
4. Reduce heat to low, cover, and simmer until bulgur is tender and broth is absorbed (10-15 minutes).
5. Adjust seasoning with more soy sauce if needed.
6. Sprinkle with parsley if desired.
