Tangy, creamy mashed potatoes made with buttermilk instead of butter.
Ingredients
2 lbs potatoes, peeled and cubed
1/2 to 3/4 cup low-fat buttermilk, warmed
2 tablespoons butter buds
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons fresh chives, chopped
Instructions
1. Boil potatoes in salted water until very tender, about 20 minutes.
2. Drain well and return to pot.
3. Mash potatoes with potato masher.
4. Add warm buttermilk gradually, mashing as you go.
5. Stir in butter buds, salt, and pepper.
6. Add more buttermilk if needed for desired consistency.
7. Fold in chives and serve immediately.
