A super simple Cajun-spiced rice bake with black-eyed peas. Just mix and bake!
Ingredients
1 can (16 oz) Cajun-spiced stewed tomatoes
1 onion, chopped
1 can (16 oz) black-eyed peas
Assorted leftover vegetables
1 1/2 cups rice
Instructions
1. Preheat oven to 350°F.
2. Mix all ingredients in a baking dish.
3. Cover and bake until rice is done, about 45-60 minutes.
4. Check occasionally and add water if needed.
