Caribbean Rice with Tropical Fruit

A sweet and savory rice dish with mandarin oranges, pineapple, and mango chutney.

Ingredients

2 cups hot cooked rice 11 oz canned mandarin oranges, drained 8 oz canned crushed pineapple 1/2 cup chopped red bell pepper 1/3 cup sliced green onions 2 tablespoons mango chutney 1/4 teaspoon ground ginger

Instructions

1. Cook rice according to package directions. 2. Combine all ingredients in a large skillet over medium-high heat. 3. Stir and cook until ingredients are blended and thoroughly heated. 4. Serve as a side dish or with grilled vegetables.
