Casablanca Couscous

Moroccan-inspired couscous with curry, paprika, and raisins. Uses tofu for protein!

Ingredients

1 cup couscous 1 1/2 cups water 1 cup sliced carrots 1 cup sliced celery 1 1/2 lbs tofu, cubed 1 can chickpeas 1 can tomato sauce 1/2 cup raisins 1 onion, chopped 1 cup sliced mushrooms 2 teaspoons curry powder 1/4 teaspoon cayenne 1 teaspoon paprika 1 teaspoon salt

Instructions

Vegetable Mixture: 1. Brown tofu, onion, carrots, celery, and mushrooms in water/wine. 2. Add remaining ingredients, bring to boil. 3. Cover and simmer 40 minutes. Couscous: 1. Boil 1 1/2 cups water, pour over couscous. 2. Stir, cover, let stand 5 minutes until water absorbed. 3. Serve vegetables over steaming couscous.
