Ingredients
1/2 cup vegetable stock
1 medium red onion
3 medium green peppers
3 medium potatoes, sliced
3/4 cup chickpeas
1/4 cup raisins
2 cups zucchini, sliced
3 tablespoons tomato paste (low salt)
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 clove garlic, crushed
1/2 teaspoon paprika
1/4 cup white wine
10 oz couscous, uncooked
Instructions
1. Sauté onions and peppers in broth.
2. Add remaining ingredients (except couscous) and simmer 35 minutes.
3. Meanwhile, prepare couscous according to package instructions.
4. Let vegetables stand 10 minutes.
5. Serve over couscous.
