A colorful stir-fry with cauliflower, broccoli, snow peas, and more. Quick and healthy!
Ingredients
1/2 cup vegetable broth
2 cups cauliflower florets
2 cups broccoli florets
1/2 cup sliced celery
2 tablespoons diced ginger
10 oz snow peas
1/2 cup sliced red pepper
12 mushrooms, thinly sliced
1/4 head cabbage, shredded
2 tablespoons tamari soy sauce
8 oz can bamboo shoots, drained
8 oz can water chestnuts, sliced
1 medium onion, sliced into rings
1/2 lb bean sprouts, drained
Instructions
1. Bring broth to boil over high heat.
2. Add cauliflower, broccoli, celery, ginger, snow peas, and red pepper. Cook, stirring, 2-3 minutes.
3. Add mushrooms and cabbage. Continue cooking and stirring 1-2 minutes.
4. Stir in remaining ingredients (bamboo shoots, water chestnuts, onion, bean sprouts, soy sauce). Cook 1 minute over high heat.
5. Reduce heat and simmer 1 minute.
6. Serve immediately over rice.
