Spicy fat-free cornbread with smoky chipotle peppers. Reduce peppers if you prefer milder heat!
Ingredients
1 cup coarsely ground yellow cornmeal
1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
2 egg whites, lightly beaten
1/2 cup buttermilk
1/2 cup soy milk
6 tablespoons applesauce
4 canned chipotles, pureed
Instructions
1. Preheat oven to 450°F. Preheat an 8-inch cast iron skillet or pie pan in oven for 20 minutes.
2. Combine cornmeal, flour, sugar, salt, and baking powder.
3. Fold in egg whites, buttermilk, soy milk, applesauce, and pureed chipotles.
4. Spray hot pan with cooking spray.
5. Immediately pour in batter about 3/4 of the way up.
6. Bake for 25 minutes until brown around edges and firm.
7. Cut into 8 wedges.
