Japanese scattered sushi with vegetables and shiitake mushrooms over seasoned rice.
Ingredients
3 1/2 cups cooked sushi rice (brown rice works)
2 dried shiitake mushrooms
1 carrot, cut into matchsticks
Stock:
1/4 cup dashi stock
1/4 cup shiitake soaking water
2 tablespoons mirin
1 1/2 tablespoons soy sauce
1 tablespoon sake
Toppings:
1/4 oz bamboo shoots, cubed
1/4 cup shredded bok choy
1/4 cup sliced radishes
1/2 cup cooked snow peas, sliced
1/4 cup raisins
2 hard-boiled egg whites
Instructions
1. Soak shiitake mushrooms in lukewarm water 30 minutes. Reserve liquid. Trim stems and slice caps.
2. Mix stock ingredients. Cook carrots in stock, add mushrooms, and cook until done.
3. Dice bamboo shoots into 1/2-inch cubes.
4. Mix carrot, mushrooms, bamboo shoots, radish, bok choy, and sushi rice.
5. Slice snow peas.
6. Top with raisins, snow peas, and sliced egg whites for decoration.
7. Serve at room temperature.
