Traditional New England cornmeal and molasses bread. A recipe from 1945 adapted for fat-free baking!
Ingredients
1 cup yellow cornmeal
2 cups water
2 tablespoons applesauce
2 teaspoons salt
1/2 cup molasses
1 package dry yeast dissolved in sugar water
5 cups flour (half whole wheat, half unbleached)
Instructions
1. Stir cornmeal into water. Boil 5 minutes over low heat.
2. Stir in applesauce, salt, and molasses.
3. Cool to lukewarm.
4. Add dissolved yeast and some flour until kneading consistency.
5. Knead in rest of flour. The amount varies with the flour type.
6. Let rise until double in bulk.
7. Form into 2 loaves, let rise again until doubled.
8. Bake at 375°F for 45 minutes. Reduce to 350°F after 20 minutes.
