Homemade bagels that are better than store-bought! The boiling is the magic that makes bagels what they are.
Ingredients
4 1/2 cups flour
2 packages active dry yeast
1 1/2 cups warm water (110-115°F)
3 tablespoons sugar
1 tablespoon salt
1 tablespoon sugar (for boiling water)
1 gallon water (for boiling)
Instructions
1. Combine 1 1/2 cups flour and yeast. Mix warm water, 3 tablespoons sugar, and salt. Pour over flour mixture.
2. Beat at low speed 30 seconds, scraping bowl. Beat 3 minutes on high.
3. Stir in remaining flour until you can mix with a spoon.
4. Knead until smooth and elastic, 6-8 minutes. Cover; rest 10-15 minutes.
5. Cut into 12 portions, shape into balls. Punch hole in center with floured finger, pull gently to enlarge to 1 1/2 - 2 inches.
6. Place on greased sheet, cover, let rise 20 minutes.
7. Broil 5 inches from heat 1 1/2 - 2 minutes each side (tops should not brown).
8. Heat 1 gallon water with 1 tablespoon sugar to boiling, reduce heat.
9. Cook bagels 4-5 at a time for 7 minutes, turning once. Drain.
10. Place on greased sheet. Bake at 375°F for 25-30 minutes.
